Top 5 Characteristics of Honey

Every type of honey tastes different. They each have a different flavor profile based on the flowers in the area the bees reside. Some honey is darker. Some honey is lighter. Some honey is sweeter. Some honey is more bitter. Below are the top 5 characteristics I look for in honey.

  5. Aroma

Sweetness

Sweetness is a major factor of honey. How sweet the honey is will greatly influence the full complexity of the honey. Some honey is sweeter than other types and it greatly impacts the full profile of the honey.

Color

Color is a subtle, but important factor in honey. Honey can be a light golden color all the way to deep dark brown and anywhere in between. I have personally harvested honey that was a dark deep brown as well as honey that is a light golden color.

Viscosity

The viscosity of honey can impact the texture of the honey. Honey that flows faster has a different feel than honey that is slow moving. The honey from my hives is quite viscous and flows quickly.

Flavor

The flavor of honey is perhaps the most important. All other factors play into the flavor of honey. The flavor is greatly influenced by the flowers the bees harvested nectar from. In my honey you can greatly taste the floral aspects from the wildflowers located near my hives.

Aroma

The aroma of the honey greatly influences the overall experience of honey. The aroma is also greatly influenced by the flowers near the hive. My personal honey smells like wildflowers whereas the honey my mentor harvests smells like cedar as he has a lot of cedar trees near his hives.

Who am I?

Who is Jonny Bee?

Jonny Bee is a nickname I received as a kid. To be honest I added the Bee part once I got started in beekeeping, it was just Jonny B growing up.

Why start a blog about bees and honey?

I want to share my passion for honey with those with similar interests. I love the flavor and complexity of different types of honey, and want to explore honey from all across the country.

What will you be writing about?

I will write about the ins and outs of honey, my personal experience in beekeeping, and I how I have helped others get started in beekeeping.

What is your favorite type of Honey?

Right now my favorite type of honey is my own honey. Jonny Bee Honey as I call it. There is just something about harvesting your own honey that makes it so great. I keep my bees out at my family property out in the country near Caldwell, Texas. We have an abundance of wildflowers growing in our pasture, and my bees take advantage of these beautiful flowers.
